I don't usually offer a Buy It Now price. By starting it out at a minimum bid, one can protect their item from being "stolen" by low-ball bids. I prefer to let the bidder(s) determine what they want to pay for the item. Isn't that what an auction is all about? "Buy It Now" is not an auction ... it is a fixed retail price. Just my opinion.
