I can't say for sure why they are so hard to find. I am guessing a bunch of them are in "non-strike collector" hands as souvenirs of Planet Hollywood visits. I was there after the release, those machines were really tough to win on, I got 15 strikes of mostly silver but some clad. The reds were every ten in the stacks (if my memory serves me correctly) and all three machines had reds in them. But they weren't dropping, I got exactly one (The A-List). I was back out two weeks later and the reds were still in play, got eight strikes, no reds.
I was at Planet Hollywood last June when they still had three machines running, there were no reds in the machines then and I think that was the end of the strike machines. Two were about half full, one had maybe 30 strikes in it. I played about an hour and got a bunch of strikes which were mostly clad and two or three silver. The clads were pretty tarnished. I asked at the cage if they had any more strikes and they said everything was in the machines. When the convention rolled around the third week of June, the machines were gone.
I saw a few come up on ebay last year and they sold in the 45-60 range. I've only seen the same two you mentioned this year. I still need to find a Playing Field too, hopefully one will turn up.
