I played at the Palms today, and they really do have a mix of older $10 strikes in the machines. I got cars, military, funny cides, and playboys, and some bluecaps. I asked twice at the cage which $200 they had left. At this time they had the Military, and Welcome to Las Vegas - both silver on gold and gold on silver. I took a silver on gold as I didn't have that one. They also told me that some people do turn in $200 strikes at the cage, so it's kind of pot luck. My hopper ran dry after $100 (I had won 14 at that point), and then they loaded a full rack of blue caps into my machine. I kept a few, but didn't like trading them for a $200 strike.
